make to chocolate

My time was still in SMIP school for 3 years I followed the training in a 5 star hotel in Jakarta. I am training for 6 months there. part that I follow is the part in making chocolate. various kinds of chocolate I made there, with trained by a qualified chef who has worked there for many years.
many recipes recipes how to make chocolate which he gave to me. so I can make them yourself. one chocolate recipe I ever made was almond ganache ..
I will provide a way to make almond ganache.

fabric material:

900 grams of milk choc converture
250 gr fresh cream
200 g praline paste
200 g almonds

how to make it:

1. melt chocolate in a way not directly heat the chocolate over the fire or by benmary.
2. almonds roasted in the oven for 5 minutes, when a visible brownish means almonds can be lifted, then crushed almonds roughly.
3. already melted chocolate and praline cream input fres paste into the melted chocolate already.
4. after all input has been mixed almonds that have been burned and destroyed earlier, mixed into one.
5. input into the small print small and allow it to cool and harden.
